THE CELLAR
The layout of the cellar and house represents the typical traditional farm of the Cognac region.
The cellar is contiguous to the north wall of the house: this naturally regulated situation combined with a seasonal temperature and hygrometry is ideal for the aging of cognac and pineau. The ground is covered with dense clay.
The cognac ages in charentaises barrels only; the pineau ages in demi-muids (600 liters barrels).
